Raw Strawberry Chia Fridge Jam

 
My Strawberry Rhubarb Flax Jam recipe is very popular but many people ask if they can use chia seed instead of flax. The result? My Raw Strawberry Chia Fridge Jam! You can use frozen berries if fresh are not available in your area. Please note this is a fridge or freeze jam and cannot be kept on the shelf. Raw Strawberry Chia Fridge Jam
 
Ingredients:
1lb (3 cups)   fresh organic strawberries
2 tbsps          chia seeds
2 tbsps          raw honey
 
Optional:
1/2 tsp           vanilla powder or extract
 
Directions:
1. Wash berries well. Remove tops from strawberries and add to a blender.
2. Add chia seeds, raw honey and optional vanilla to the strawberries.
3. Process until smooth.
4. Transfer to a glass mason jar, cover with sealable lid and refrigerate for a few hours to thicken.
5. Honey helps to preserve for up to 2 weeks. Makes 3 Cups.
