Key Lime Hemp Smoothie

If you like key lime pie, you are going to love this shake. It will provide your body with electrolyte minerals like potassium and magnesium, which help to regulate many functions in the body – from the amount of water you retain to the acidity (pH) of your blood. Electrolyte minerals also help to keep your muscles working properly, making this a great shake to enjoy before or after a workout! 

Ingredients:

1/2                 ripe avocado (about 1/3 cup)

3 cups           roughly chopped baby spinach

1/4 cup          fresh lime juice (use lemon juice if unavailable)

2 cups           unsweetened coconut beverage (Try my homemade coconut beverage recipe.)

2-3 tbsp         raw honey (to taste)

2 tbsp            hemp hearts (Click here to learn more about the power of hemp nutrition.)

Optional Superfood Booster:

1 tsp              sustainable fish oil

Directions:

1. Place all ingredients into a blender and blend until smooth and creamy.

2. Adjust sweetness to taste. Makes 2 shakes.

I dont understand what Unsweetened Coconut beverage is? I am from the UK will it have a different name type here in the UK?

Hi Monica!

Great to hear from you. Here in North America, coconut beverage is a pre-made drink that is similar to almond milk. We make our own out of coconut milk. Here is the recipe:

Coconut Beverage:

Ingredients:
400 ml organic coconut milk (full fat)
1600 ml water
3 tbs raw honey
½ tsp pink or gray natural salt
1 tsp ground chia (to thicken)
1 tsp organic vanilla extract

Directions:
1) Put all ingredients in a blender except the ground chia and blend on high.
2) As the ingredients are blending, slowly add ground chia to allow it to blend thoroughly.
3) Store in 2-liter mason jar in the fridge. Keeps for 1 week.

Hi Monica, I'm from UK too and you can buy Vita Coco coconut water from most supermarkets now. Be careful if you buy other brands to check that they don't have sugar added - I have made that mistake. It's delicious but pricey.

Great to hear from our friends in the UK! You are right about the coconut water. You really need to be careful as so many of them contain sugar and even preservatives.

Here in North America coconut beverage is a product made from coconut milk to imitate milk. I have created a recipe that is similar to the pre-made product but you will need to shake it each time you use it.

Coconut Beverage:

Ingredients:

Great to hear that you tuned in! Here's the recipe as requested:

Healthy drinking chocolate

2 TB coconut butter
2 TB Tahini
1/4 cup raw cocoa powder
1/4 cup raw honey
3 TB lacuma
2 TB vanilla extract
pinch seasalt and ginger
1 cup hot water- just off the boil.

Mix in blender and thin down to desired consistency with hot water or milk.

I 'm wondering if this will still taste good if I use my own homemade coconut milk (filtered water and unsweetened coconut in a vitamix) instead of coconut beverage?

Thanks for checking in. I often use a homemade coconut milk and it tastes great. You might want to add a bit more sweetener but that is up to you.
